Golden-Crisped Herb-Butter Roasted Chicken

A Simple, Flavorful Way to Make the Most of Your Pasture-Raised Bird

There’s nothing quite like the smell of a chicken roasting in the oven—especially when it’s been basted in herb-infused butter and raised on pasture the way nature intended. This is our go-to method for a classic roast chicken that’s packed with flavor, perfect for Sunday dinner, and makes enough leftovers to stretch into two more meals (you’ll get the full plan when you download the free PDF below!).

But here’s the thing: not all chickens are created equal. For a roast like this to truly shine, it needs to start with a bird that’s been raised right. Our Porky Pastures chickens are raised on pasture, with access to sunshine, bugs, and fresh forage—just how chickens are meant to live. We don’t use GMOs, corn, or soy in our feed, and we support our flock’s health holistically using herbal blends for immune support and vitality. The result? Chicken that’s more flavorful, more nutrient-dense, and more filling than anything you’ll find at the store.

Golden-Crisped Herb-Butter Roasted Chicken with Porky Pastures Pharma-Free, Non-GMO, Soy-Free, Corn-Free Chicken!

Here’s our favorite way to roast it:

Ingredients:

  • 1 whole Porky Pastures chicken

  • 4 tbsp butter, softened

  • 1 tbsp chopped fresh rosemary

  • 1 tbsp chopped fresh thyme

  • 1 tbsp chopped fresh sage

  • 1 lemon, halved

  • 4 garlic cloves, smashed

  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 425°F.

  2. Pat the chicken dry with paper towels and season the cavity with salt and pepper.

  3. Stuff the cavity with the lemon halves and garlic.

  4. Mix the herbs with the softened butter. Carefully loosen the skin over the breasts and rub the butter underneath. Rub any remaining herb butter over the outside of the chicken.

  5. Place the chicken breast-side up in a roasting pan or a cast iron Dutch oven.

  6. Roast uncovered for about 1 hour and 15 minutes, or until a thermometer inserted into the thickest part of the thigh reads 165°F.

  7. Let rest for 10-15 minutes before carving.

The skin gets perfectly crisp, the meat stays juicy, and the herbs infuse every bite. Best of all? Once dinner is over, you’ll have enough leftovers to make two more nourishing meals without starting from scratch.
